Now, every area of the country has their own cultural dishes. There is clam chowder up in Boston, the soft pretzel and cheesteaks in Philly, Italian Beef in Chicago, whatever the West Coast has… so yes, the Denver area has it’s own thing as well: Green Chili. No, not Chili Verde or green salsa. Green Chili is more of a stew, made with Hatch chilis, onions, spices, pork, and other things. If you are vegetarian, make sure you stress that when you order. From what I understand (from Kelly), green chili comes more from the Four Corners region (southwestern Colorado, where the state meets up with Utah, Arizona, and New Mexico.) I had never heard of this dish before I moved here, but the locals seem to put it on everything: sandwiches, burritos, burgers, just in a bowl… So, you should venture out and try it at some point. You can normally find it all over the place, but the best K & K Approved spot is definitely Pete’s Kitchen on E Colfax as well as Sanitago’s (multiple locations).
